... UPDATE: NOTHING FROM INSTAGRAM 11/9 . The reason I stopped posting and will probably delete my account. ... Ok...just a rant.....ive tried repeatedly to upload current material from my covers- blocked, copyright; my ASL cover (American Sign Language) cover with NO music - blocked, copyright; MY ORIGINAL song- blocked, copyright (they tagged it as the movie Avengers!); they are blocking my photos for some reason- no reason given by Instagram; Instagram is also severely limiting my ability to like photos. Somehow I'm in Instagram purgatory. I cant get an answer from them. Hoping they see this. Thank you to my followers for the support! . @instagram . #instagram #socialmedia

It's been an amazing journey as I've forged friendships with so many followers. . As with everything in life....change is inevitable. I have a LOT on my plate. Without going into too much detail....I need to step away from Social Media. I've decided to just step back and leave my account as is. I will be inactive on this account. Coconut Cream Pumpkin Quinoa Porridge!

. I love coconut and pumpkin! . Coconut Cream Pumpkin Quinoa Porridge! . Ingredients 1 1/2 cup uncooked quinoa (rinsed) 12 ounces almond milk 8 ounces of water 1 cup to 1 1/2 c pumpkin puree (a few tbsp for topping as well) 1 tbsp coconut oil 1/3 cup additional coconut cream or coconut milk 1/3 cup unsweetened shredded coconut 1 tsp cinnamon (and some for topping) 1/2 tsp cinnamon 4 tbsp maple syrup or honey Any additional toppings such as nuts, gluten free oats or granola, coconut sugar, etc. optional 2-3 tbsp of coconut sugar or raw sugar if you want it sweeter optional pinch of ground ginger Instructions See notes for making pumpkin quinoa breakfast in a slow cooker. If you are using a rice cooker, rinse quinoa and place in rice cooker. Add milk and water and press rice setting. If you are making this on a stove top, bring water and milk to a light boil then add quinoa and cover on low to medium low. About half way through cooking (8 or 9 minutes) stir in your pumpkin puree. Cover again and wait till it’s cooked and quinoa is fluffy (about another 8-10 minutes or so). Turn off rice cooker or put on warm. If using stove top, turn off heat and keep it on the burner. Add in your coconut oil, liquid coconut cream (or canned coconut milk), and spices. Mix thoroughly Add in your shredded coconut and maple syrup. Spoon into bowls and top with 1 tbsp additional pumpkin and more cream or coconut milk for extra creaminess If you’d like. Sprinkle with additional cinnamon. Garnish with toppings of choice; granola, nuts, etc

. Like yoga veganism is a lifestyle. I was raised as a vegan which caused a problem between my doctor and mom. The doctor said I need meat and milk in my diet in order to thrive. Well she(doctor) was wrong! I've always been right on target in terms of thriving and had zero deficiencies. . I've never had soda/pop, traditional snack foods and I've never had fast food! I don't even crave it. This was how I was raised. . In my morning posts, I'm showing you the variety of dishes that can be prepared if you want to "go vegan". . Apple walnut Quinoa Breakfast Bowl! . Ingredients 1/2 of a cup uncooked Quinoa 1 Apple of choice (cored and diced) 2 1/2 cups of Water 2 teaspoons Maple Syrup or more to taste 1 teaspoon Cinnamon 1/3 of a cup Walnut Halves (optional) 1 teaspoon Raw Cacao Nibs (optional) Instructions Rinse quinoa with hot water to remove any dirt and bitter taste. Dice an apple of choice. In a small saucepan add quinoa, 1/2 of a cup of the diced apples, and water. Bring to boil, uncovered, over medium-high heat. Reduce heat and simmer for 15-20 minutes, stirring occasionally, until nearly all the water has been absorbed. Remove saucepan from heat. Stir maple syrup and cinnamon into the cooked quinoa. Divide quinoa between two bowls and top with remaining fresh diced apples, walnuts, and cacao nibs.
