ORANGE POPPY SEED LOAF 🍊🍋💫 perfect zesty monday pick-me-up! — whole-grain, probiotic, refined sugar free DRY 1 1/2c organic whole-grain flour 3 tbsp poppy seeds 2 tsp baking powder 1 tsp cinnamon pinch of salt WET 2 eggs 1/2c organic honey 1/2c greek yogurt 1 medium orange juice & zest light squeeze of lemon juice 1 tsp vanilla extract EXTRA BOOST 1 scoop @soluxe_protein original plant protein Preheat oven to 180c. Mix dry ingredients in a large bowl and set aside. Whisk wet ingredients together and combine with dry ingredients to form batter. Fold batter gently without over-mixing. Transfer to parchment lined baking tray and bake for 60-65 mins or until toothpick comes out dry. Remove from oven and cool in pan for 10 mins before transferring to wire rack. Slice and serve immediately, or store well in refrigerator for up to a week. Enjoy!

A super yummy pasta recipe comin at ya!!!! 😍 CHICKEN SAUSAGE PASTA 🍝 1 box of pasta (I used @eatbanza !) 2 zucchinis (spiralized) 3 chicken sausage 2 cups of pasta sauce (I used one with a pumpkin base but you can use whatever you have!!) 1/4 cup of olive oil 3 tbsp paprika 1 tbsp chili flakes 1 cup of mushrooms 1/2 onion (chopped finely) 1 clove of garlic (minced) 1/4-1/2 cup of sun-dried tomatoes Start by boiling your water to make your pasta noodles and spiralizing zucchini to make zoodles! In a stovetop pan, sauté onions and garlic. Once onions become opaque, add in the mushrooms. After 2-3 minutes, add in the noodles, pasta sauce, olive oil, seasonings, chicken sausage, zoodles, and sun-dried tomatoes. Mix together and cook for 2 more minutes. Make sure to not cook too long because we don’t want the zoodles to become soggy!!

A little too much of a few things so my friend who was visiting went home with a rockmelon, a bag of spinach, and some asparagus. I do love spreading the vegetable love 💖 . . . Now to work out how to use it all up without any waste. We ended up with 4 fennel’s! I think I’ve always enjoyed baking...maybe it’s in my genes. Growing up there was always plenty of home baking by my Mother or Grandmother, and there is just something really special about making delicious food for those in your life and knowing they’re enjoying it. When I decided to eat healthier, initially I stopped baking - I mean if I made yummy food filled with sugar, huge amounts of butter and loads of flour...and it was sitting in the pantry waiting to be eaten...then I was gonna eat it! But when I discovered a whole new world of healthier treat options, my passion returned. Now the feeling I get watching those around me enjoy my treats is even better because I know they are not only eating something made with love, but they are eating something that will nourish their body and fill them with the good stuff, and I think that makes them just that little bit more special. This Lemon Coconut Slice I made over the weekend is fresh and zesty and perfect as a healthy wee refreshing treat, especially as we head into warmer weather here in the Southern Hemisphere.
