Caffeine ☕️raises metabolic rate and helps mobilise fatty acids from fat tissues. It can also enhance physical performance. Citrom. Kakukkfű. Cukkini. Krémleves. ⠀⠀ Hozzávalók: ⠀⠀ 3 közepes méretű cukkini 1,2 liter víz 2 evőkanál olívaolaj 2 gerezd fokhagyma, zúzott 1 marék citrom kakukkfű só, frissen őrölt bors 150 g dr. Oetker Creme Vega 1-4 evőkanálnyi frissen facsart citromlé ⠀⠀ Elkészítés: ⠀⠀ A cukkinit megtisztítjuk, felkockázzuk és feltesszük a vízben főni. Sózzuk, borsozzuk ízlés szerint, majd puhára főzzük. Az olívaolajat a zúzott fokhagymával és ágról eltávolított kakukkfű levelekkel elkeverjük. A megfőtt cukkinit levével együtt egy blenderbe öntjük, majd hozzáadjuk az olajos fűszerkeveréket, és alaposan összeturmixoljuk. Az így elkészült krémlevest visszaöntjük a főzőedénybe, és felforraljuk. Egy merőkanálnyi levet egy tálba szedünk, és elvegyítjük a vegán tejföllel. A levest kóstoljuk, utóízesítjük, ha szükséges, és ízlés szerinti mennyiségű friss cirtomlével ízesítjük. QUICK HEALTHY DINNER IDEA INGREDIENTS:⠀ ✔️1 Chicken Breast⠀ ✔️Red Pepper Strips⠀ ✔️Baby Spinach Leaves⠀ ✔️1 Fat-Free String Cheese⠀ ✔️1/4 Cup Marinara Sauce⠀ INSTRUCTIONS:⠀ ➡️Preheat grill to med high.⠀ ➡️Butterfly the chicken breast.⠀ ➡️Place about 5 baby spinach leaves in middle, slightly to one side.⠀ ➡️Put red pepper, and string cheese on top of spinach.⠀ ➡️Roll like a cigar, and put 1-2 toothpicks on ends to hold together well.⠀ ➡️Grill for 5 minutes. Turn and grill 5 more minutes, until cooked through.⠀ ➡️Serve with marinara sauce on the side.⠀ ➡️Enjoy! 😋😋😋

Second week of getting up early has started & I will admit today was tough. I sat in bed and tried to come up with reasons why I shouldn’t get up... well here I am💪🏼 I couldn’t come up with anything but excuses and if you know me you know I hate excuses😤 it was a quick 45 minute workout but it was better than nothing & has my head in a good place for the rest of the day! I’m here to be as honest as possible through my journey because I know it’s important to show that it’s not all easy🙌🏼 It’s about balance and finding what works for you to make YOU happy & healthy✅

Farmers’ Market Pasta with Walnut Pesto. . Credit: @pinchofyum. . INGREDIENTS (Servings 4): Farmers’ Market Pasta: • 8 ounces pasta (half of a box of farfalle, rigatoni, penne, whatever you like). • 6 cups fresh, seasonal veggies (2 cups cherry tomatoes, 2 cups asparagus, 2 cups sliced mushrooms). • 3 cloves garlic. • A drizzle of olive oil. • Salt to taste. Vegan Walnut Pesto: • 1 cup walnuts. • 1 1/2 cups tightly packed basil leaves (you can sub other greens if you don’t have enough basil). • 1/4 cup olive oil. • 1 very small clove of garlic. • Juice of 1 lemon (just use half if it’s really juicy). • 1/2 teaspoon kosher salt . . INSTRUCTIONS: 1. Veggies: Preheat the oven to 425 degrees. Arrange the veggies on a rimmed baking pan. Toss with a little bit of olive oil and salt. 2. And Roasted Garlic: Peel your garlic cloves. Place them in the center of a small piece of foil, drizzle with a little oil, and wrap it up. Place on the baking pan. Roast everything for 20-30 minutes (depends on what kind of veggies you’re using). When done, mash the roasted garlic so it makes a paste. 3. Walnut Pesto: While the veggies roast, pulse pesto ingredients in a food processor. 4. Pasta: Also while the veggies roast, cook pasta according to package directions. Drain, toss with oil, and set aside. 5. Toss: Toss your noodles with the roasted garlic and veggies. Serve with a scoop of the pesto. Hello Tuesday! Today I'm introducing plantain to Hector. I love the West African cuisine, and if you are familiar with a few countries from that region you will recognise the 'other' cousin of the banana. Plantains are larger and it has a thicker structure than the fruit. But it is equally sweet and delicious. I boiled the plantain and diced it. Hector will eat it with, zucchini, chickpeas and meatballs. I steamcoocked the veggies and fried the meatballs.
