Black Bean & Spinach Quesadillas by the amazing @thevegansara with a delicious Vegan Nacho Cheese! Receipe below 😍 . Ingredients: 12 6-inch corn tortillas 1 can black beans (drained + rinsed) 1/2 cup chopped onion 5 oz spinach 1 tbsp cumin salt & pepper vegan nacho cheese (recipe below if you don’t have access to store bought) salsa vegan sour cream . Melt some vegan butter in a large saute pan on medium, add onion and cook until soft and golden. Add spinach and cook til wilted, then add beans, cumin, salt & pepper. Set bean mixture aside. Using a nonstick pan, place tortillas on the pan on low/med and toast until you see the tortilla bubble up. Spread 2 tbsp of cheese sauce on the tortilla in the pan using a wooden spoon. Add some bean filling to half the tortilla and then fold the other half on top and press down with the spatula (it should sizzle). Cook 3-4 minutes on each side. Repeat with the rest of the tortillas. Top with salsa, vegan sour cream + more cehese. . Vegan Nacho Recipe: 3.5 cups water 2 cups raw cashews (pre-soaked) juice from 1 lemon 3 tsp salt 3/4 tsp paprika 1 tsp garlic powder 1/2 cup nutritional yeast (optional for spiceness) 7 oz can of pimientos (if you don’t have substitute with 1/2 red pepper or just a few dashes of sriricha) . #TRANSFORMATIONTIME ♡ With officially having completed two rounds of @kayla_itsines BBG program, I thought it would be appropriate to post a “transformation”. Both pictures of me represent a girl at the start of her fitness & health journey. Yes there are approximately eight months between these pictures, but I do consider myself to still be on the start of journey. The reason why is because I am still working on myself from the inside-out and I plan to never stop doing so 🤷🏽‍♀️ There will always be more growing and learning to do, and that’s just life ☺️💗 I already have become a much happier, confident, and positive person since the first picture and I can’t imagine what the future will bring. Yes, there were times where I felt like quitting this new lifestyle of mine. Yes, there were times where I felt hopeless and defeated by this journey and that it was taking me no where. But did I let that stop me? No!! 🙌🏻 At the end of the day, diets don’t work, but lifestyle changes do and that’s just what I did 🤗 That’s my little secret for all of you 🙃Learn what works, what doesn’t. Make those changes so that you can live a healthier life both mentally and physically. I also want to take a moment to thank @robiinfit_xv for being my initial inspo to start BBG, love you and so glad we have connected over our platforms🤗❤️. . ♡ Okay, I am done with my little rant. I am extremely excited for my second workout of @sarahs_day Sweat It To Shred It program 🤩⚡️ I am ready to hit the gym and kill it because today is a toning power workout that focuses on legs n booty 😜 Happy Friday loves and stay positive xx - - **disclaimer: there are no photoshop or edits of any sort done to these photos.
