ROASTED BRUSSEL SPROUT CAESAR SALAD✨ MY FAVORITE DRESSING 😛 Tag a friend and grab recipe below! INGREDIENTS Romaine, arugula or spinach (whatever greens you want) 1 lb Brussel sprouts, halved 1 tbsp avocado oil 1/2 tsp salt 1/4 tsp pepper 1 avocado Dressing 3 cloves garlic, crushed 2 tablespoons dijon mustard 1 1/2 tbsp vinegar 4 tbsp tahini 1/2 cup water Juice of two lemons 1 1/2 tsp onion powder 3 tbsp nutritional yeast 1 tsp salt 1/4 tsp pepper Croutons: 4 slices sourdough bread 1/2 tbsp onion powder 1/2 tbsp garlic powder 1 tsp salt INSTRUCTIONS Preheat oven to 350 degrees F. Cut sourdough bread into cubes, place on a baking sheet lined with foil or parchment paper. Sprinkle over onion powder, garlic powder and salt. Place in the preheated oven for 10-15 minutes or until golden. On another baking sheet place halved Brussel sprouts, drizzle over oil and season with salt and pepper. Place in oven and bake for 20 minutes or until golden and crisp! In a medium sized bowl combine all dressing ingredients and whisk together until well combined. Roughly chop greens, place in a large mixing bowl. Vegan chocolate mousse by @biancazapatka 💜 (Recipe as posted on biancazapatka.com) Ingredients: 1 cup aquafaba (chickpea water) (240ml) liquid from one 14oz can of chickpeas •4.3 oz dark vegan chocolate (120g) •a bit of non-dairy milk (optional) •1-2 tbsp sugar * (optional) •1/2 tsp vanilla extract To serve (optional) •whipped coconut cream •1 tbsp grated chocolate Instructions: 1)Break the chocolate into smaller chunks and place it in a microwave-safe small bowl together with a splash of non-dairy milk, if using (it’s not necessary but I find, it makes a better consistency). 2)Place the bowl over a water bath and slowly heat up the chocolate. 3)Once the chocolate has melted, mix with a spoon or small whisk until creamy. Take the bowl off the heat and allow it to cool down a little. 4)Open a tin or glass of chickpeas and drain the chickpea water into a large measuring jar or bowl and, if desired, add vanilla extract. (Please make sure the bowl and utensils you’ll use to whip aquafaba are completely grease-free as it can prevent aquafaba from reaching stiff peaks). 5)Using an electric hand mixer, beat the aquafaba until whipped and stiff peaks form. This can take about 7-10 minutes. (Don’t be afraid of whipping too long because aquafaba cannot be overwhipped). 6)If you want the chocolate mousse sweeter, you can now start adding sugar, gradually, while whipping the whole time. 7)Once the chocolate has cooled down sufficiently, gently fold it into whipped aquafaba using a spatula. (It’s normal if your fluffy mixture deflates a bit). 8)Divide the mixture into 3 glasses, stirring the mixture between putting it into the glasses. 9)Place them into the fridge for 3 hours at least (or overnight), so the mousse can set. 10)Serve with whipped coconut cream or non-dairy yogurt. Sprinkle over shredded chocolate or any other toppings of choice. Enjoy! Notes •One 14 oz can (400g) should give you about 1 cup (240ml) of chickpea water. •Additional sugar isn’t necessary. “Carrot Soup” Ingredients: 2 tablespoons oil 2 fat shallots, or one onion, diced 2 tablespoons ginger, finely chopped 4 garlic cloves, chopped 1 lb carrots, peeled, sliced into 1/2 inch rounds 8 ounces potatoes, rough chopped 1 apple, rough chopped 2 cups veggie or chicken stock 2 cups water 1 can coconut milk 1 cup orange juice ( juice form 2 oranges) 1 teaspoon salt 1 tablespoon honey 1 teaspoon cinnamon 1 teaspoon cumin 1/2 teaspoon cayenne, more to taste instructions: Heat oil in a large heavy bottom pot. Add onions and saute over med-high heat until tender and golden, 3-4 minutes. Turn heat to medium and add the ginger and garlic and cook for 2 more minutes, until golden and fragrant. Add the carrots, potatoes, apples, stock and water. Bring to a boil, turn heat down to low and simmer, covered for 15 minutes or until carrots are fork tender. Let this cool then blend in batches ( in a blender) until very very smooth and place back in the pot. Add the orange juice, coconut milk, salt and spices and stir to combine, while reheating over low heat. Buongiorno a tutti, 😁🥑 Mi trovo a pranzo da "DISPENSA EMILIA" che come forse qualcuno puó dedurre dal nome, mira ad essere una catena con proposte dal sapore emiliano. Location: volutamente ruspante, uso del legno per i tavoli e di pelle rossa per i divanetti. Trasmette sensazioni rustiche proprie del territorio e si ha la sensazione dell "homemade" per la cucina a vista e per il carattere familiare della location. Servizio: un po' impacciati in cassa nel prendere l ordinazione, si fanno perdonare dal puntuale e veloce servizio al tavolo. Nonostante sia una catena commerciale il servizio avviene tramite transponder che identifica il proprio tavolo e si viene serviti direttamente dal cameriere al proprio tavolo. Menù: classico della tradizione Emiliana con pasta fresca ed insalate ma la parte del leone la fanno le Tigelle fatte in casa. Noto con felicità la presenza di addirittura 5 tipologie di Tigelle vegetariane e decido di degustarle tutte. Una ottima sorpresa soprattutto nella variante con radicchio e ricotta ed in quella con stracchino rucola e pomodoro che trovate nelle immagini. Prezzi: prendendo tutte le 5 varianti di tigelle si spende meno di 10 euro e ci si riempie, provando vari sapori.
