Hump Day Feels: SESAME HONEY MUSTARD GLAZED SALMON AND SMASHED GARLICKY FINGERLINGS AND 2-INGREDIENT TAHINI DIP! Happy Wednesday loves! Hope you’re all having a fabulous week. If you caught my stories yesterday I showed some of my salmon tips. If you’re interested I will add to my highlights. Made this yesterday and enjoyed it for dinner last night. Super easy to make! Served it with some lef_farms greens and avocado coated in sesame seeds. SO YUMMMM! My boyfriend isn’t the biggest salmon fan but he loved this. Are you a fan of salmon? If not, this sesame honey mustard would be good on just about any protein! And the dip...one of my faves. • • • Deets: wild salmon steak sliced in half (I removed bone from middle), seasoned with a little Chinese five spice, salt and pepper, then seared on medium heat in butter or coconut oil for 2 minutes per side in cast iron (I add a little coconut aminos to the pan as well). Then glazed with a mixture of 2 tablespoon honey, 2 tablespoon mustard, 1 tablespoon Greek style yogurt, 1 teaspoon coconut aminos, 1 clove minced garlic and a couple drops of sesame oil (just fit flavor). Fingerlings: boil for about 10 minutes until soft, then use a cup to press them down and “smash” them. Toss in some oil mixed with a clove of minced garlic. Season with salt and pepper. You can air fry them for about 8 minutes on 390, bake them for 20 on 400, or pan fry them on medium highflier a few minutes per side. No matter which method, be sure to flip halfway. Tahini sauce: mix some tahini with some coconut aminos to taste! Recipe: Cook 3/4 cups dried green lentils as per packet directions. Meanwhile, cook 1 large minced shallot and 3 minced garlic cloves in a little vegetable broth until shallots softened, about 5 minutes, adding more broth as needed. In food processor, pulse 1 cup old-fashioned rolled oats until almost flour-like consistency. Add cooked lentils (drained to remove excess water), cooked shallot/garlic mixture, 1 tbsp gluten-free tamari/soy sauce, 2 tbsp tomato paste, 1-1/2 tsp apple cider vinegar, 1/2 tsp red chili flakes, 1/2 tsp fennel seed, 1 tbsp Italian seasoning to food processor with ground oats. Mix well and pulse just a few times to incorporate. Transfer to a large bowl and mix in 1/3 cup chopped pecans. Add salt/pepper to taste. Form about 14 equal balls and bake on lined sheet at 400F about 25 minutes, flipping half way through. Roast chicken breast (discovered the perfect way to bake chicken doesn’t come out dry that I will share soon), apple, romaine, shallot, walnut, and cucumber. Weird fact about me, I hate salad dressing. I heavily rely on the ingredients in my salad to add flavor. In this salad, I diced up a whole apple in small pieces, so that every bite of my salad has a subtle sweet taste to play the role of a salad dressing.
