🍌 Are your bananas starting to go brown? Don’t throw them out! Make these Banana Dark Chocolate Chip Muffins. I’ve been making these for years and they are always a crowd pleaser! Made with whole wheat flour 🌾, dark chocolate 🍫 chips, and half the amount of typical sugar, they make a tasty and healthy snack! 🍌Banana Dark Chocolate Muffins Ingredients: Wet Ingredients ✅ 4 ripe bananas, peeled and mashed ✅ 1 egg, beaten ✅ 1/2 cup (125ml) sugar ✅ 1/3 cup (60ml) melted butter or canola oil ✅ 1 tsp (5ml) pure vanilla extract Dry Ingredients ✅ 1.5 cups (375ml) whole wheat flour ✅ 1 tsp (5ml) baking soda ✅ 1 tsp (5ml) baking powder ✅ pinch of salt ✅ 1/2 cup (125ml) dark chocolate chips Instructions: 1️⃣ Preheat oven to 350F 2️⃣ Mix all wet and dry ingredients separately. Add dry mixture to wet mixture. 3️⃣ Scoop muffin batter into a 12 cup muffin pan, lined with muffin liners or coat inside of pan with a bit of oil. 4️⃣ Bake for 20 mins and enjoy! I’m having some rest and recovery time to myself today. I’m sitting listening to the Radio, drinking tea and planning my schedule for next week and how I’m going to fit in working, food prep, shopping and some exercise. When I think about these things initially it’s so overwhelming, but if I take the time to make a plan for each day, don’t over stretch myself with my time constraints and stick to it, it’s always much better (and calmer!) than I think. One change I’ve made that I’ve definitely benefited from is getting up half an hour earlier each day. 15 mins of that I use for either HIIT training or yoga and the other 15 mins for mindfulness, meditation and sometimes just to think about my day ahead. This process helps me to get focussed and I leave for work feeling more alert and in a good headspace. I’ve also noticed that this good start helps me all throughout my day to make better decisions, especially with my food choices. Anyway, have a lovely weekend and I hope that the week ahead isn’t too overwhelming with the Christmas prep. My lunch prepped for this week: Chicken Fajita Flatbread wraps . I was once there where I overcomplicated meal prepping. . I didn’t know what to get and how to make sure I was staying within my macros. . Believe it or not, I use to stay up at night and calculate the macros of my groceries (before even getting them) to make sure what I was going to prep was perfectly aligned with my calories...yikes. . Now, I don’t stress about what to get and focus on 3 key things when meal planning: . 1.) The recipe is sourced around protein (usually a chicken or beef entree) . 2.) The recipe is relatively low carb so I don’t overeat calories throughout the day. . 3.) The recipe is enjoyable. . Chicken Fajita flatbread wraps are something I came across on Pinterest and SUPER easy to meal prep and prepare throughout the week! . If you have no idea where to start meal prepping, download Pinterest and look up protein-based recipes such as: Beef bowls, rotisserie chicken salad, pan-sheet chicken, etc... .
