✨EASY VEGAN PESTO SPAGHETTI SQUASH W/GARLIC BREAD✨ r e c i p e b e l o w 👇🏼 . Do you ever feel like comfort food & fresh/healthy food should get together more often?! 🙃 And then there was thisss. . Instructions: 1) Bake small spaghetti squash face down on a baking sheet at 400F for 35 minutes. 2) Once done, flip the halves over and use a fork to create “spaghetti”. 3) Mix in ~3 Tbsp @gothamgreens vegan pesto, ~1/2 tsp minced garlic and some fresh cherry tomatoes, then sprinkle on a pinch of sea salt & nutritional yeast. 4) Return to the oven for 3 minutes on broil. 5) Serve up alongside a @mybreadbakery Ancient Grains Flatbread. You can avoid this if you are a Vegan or looking for a total vegetarian meal. It is a perfect vegan dish to have if you are following a low-carb diet.⠀⠀ ⠀⠀ I love mushrooms and I try to add them in any recipe if it is making sense. For this recipe, I am using portabello mushrooms. You can use any mushroom or any combination of mushroom you like in this recipe. Mushrooms is a great vegetable if you are following a low-carb diet or lifestyle. They are a fantastic source for fibers and plant-based protein. They also provide many important nutrients, including B vitamins, selenium, potassium, copper, and vitamin D. ⠀⠀ ⠀⠀ This quick recipe can be ready in less then 15 minutes. Cut the mushrooms and cabbage coarsely. Heat a pan with ghee on small to medium heat. Add the garlic with the chili pepper (optional if you don't like spicy food) and cook for 1 minute. Add the mushrooms and cabbage and let it cook for about 5-8 minutes stirring occasionally until it softens. Add pepper and the soy sauce and stir.
