There’s really not much to it! 🤷🏻‍♀️ You’ll love this quick, easy, healthy snack for the whole family. 🤗 •Oatmeal packets are easy, convenient and lots of flavors to choose from. I used Vanilla Almond which has 10g protein per packet. If you want more protein, add vanilla whey protein powder to the mix. •Mix unsweetened powdered almond butter (or powdered peanut butter) w/ a small amount of water so it’s not too runny. Add honey if you want it a little sweeter. Try this healthy recipe for low carb zucchini enchilada roll ups! INGREDIENTS: 1 3/4 cups enchilada sauce 2 large, 14 oz each zucchini, cut lengthwise into 12 (1/4-inch thick) slices 1/2 teaspoon kosher salt fresh black pepper, to taste 1 tsp olive oil 8 ounces cooked shredded chicken breast, from rotisserie chicken 1/2 cup minced onion 2 large clove garlic, minced 1/4 cup chopped cilantro, plus more for garnish 1 tsp cumin 1/2 tsp dried oregano 1/4 tsp chipotle chili powder 3/4 cup shredded Mexican cheese blend sour cream, optional INSTRUCTIONS: 1. Preheat the oven to 400F. Spread 1/4 cup of the enchilada sauce on the bottom of a 13 x 9-inch baking dish. 2. Cut the zucchini lengthwise, into 1/4-inch thick slices until you have a total of 12 slices about the same size. It’s easiest to do this with a mandolin. 3. Season both sides of the zucchini with 1/2 tsp salt and pepper, then grill on a grill pan over high heat to help dry out the zucchini, until pliable and grill marks form, but not fully cooked, about 2 minutes on each side. 4. Heat the oil in a medium skillet over medium-high heat. Sauté onions and garlic on low until soft, about 2 minutes. Add chicken, salt, cilantro, cumin, oregano, chili powder, 1/4 cup of the enchilada sauce, and cook 4 to 5 minutes. Remove from heat. 5. Spread 3 tablespoons chicken on each slice zucchini. Roll up slices and arrange them each seam side down in the prepared dish. 6. Top with the remaining enchilada sauce and Mexican cheese blend and tightly cover with foil. 7. Bake 20 minutes, or until the cheese is hot and melted. 8. Drizzle with sour cream, if desired and garnish with cilantro. . https://whyweight.tv

Going...Going...Gone...Blackberries...Gems of the Hedgerow!!😕 * Seasonal produce is wonderful but it’s always sad to see it go...especially if you’ve only just got on your roll with it!!🙄😄 According to the weather forecast last night @bbc_weather today is our 26th wet day in a row!!🤦🏼‍♀️☔️✋🏼...and counting... * These I cooked with, were the last small offerings on a plant I gave my mother years ago...it’s non-prickly😉 and when at its best produces huuuge juicy berries!! * Blackberries are just about ok on a low carb Keto diet👍🏼 and they really pack a punch nutritionally...with potassium, magnesium, calcium, vitamins A, C E and most Bs. And with their deep purple colour you know they’re full of antioxidants!! * I love sweet ‘n savoury together!! Here I added the blackberries to an easy tray baked lunch with some marinated beef skirt steak. * 👩🏻‍🍳 ~ Beef skirt is prized for it’s flavour rather than it’s tenderness and so takes well to marinades before using fast cooking methods. (Otherwise it’s traditionally braised) I used a teaspoon or so of raw organic apple cider vinegar @aspallvinegar , a little grated fresh ginger, teriyaki sauce, olive oil and S&P - all well mixed and rubbed into the beef. ~ Prepare a variety of vegetables and spread onto a baking tray or large roasting tin with a little avocado oil @olivadouk Oven at 200C/400F * When the vegetables are starting to brown, toss them over several times and then sprinkle on the blackberries then the marinated steak on top. * Cook for 20/25mins depending on the thickness of the meat and your preferences to rare->medium->well. * Serve sliced with the roasted vegetables and those lovely blackberries which add a soft and juicy tang. * 👌🏼🎉😋😋😋 * #blackberries #beefrecipe #britishbeef #marinated #traybake #easyrecipe #healthyrecipe #olivado #avocadooil #seasonalfruit #seasonalvegetables #healthycarbs #eatwellfeelwell #eatwholefood #acuriouscook #antioxidants #aspall #bbcweather #itsrainingagain #foodphotography

You can use any nut/seed butter you like. And if you skip the collagen and these are totally vegan (no need to sub for anything). And keep stored in freezer or fridge! . Peanut Butter Crack Fudge PB layer: 1 cup peanut butter 1/4 cup @thrivemarket maple syrup 2 scoops @ancientnutrition collagen (optional) 3/4 cup @bobsredmill almond flour Pinch of salt 1/3 cup chopped @eschocolate dark chocolate . . Chocolate layer 2/3 cup @eschocolate blackout dark chocolate, melted 1 tsp coconut oil 2 tbs peanut butter 1 scoop @ancientnutrition collagen (optional) . Directions Line 9x5 bread pan with parchment paper. Mix together peanut butter layer ingredients until well combined. Press into pan. Melt chocolate, and stir in coconut oil and peanut butter. Pour over pb layer, then place in freezer to harden. Slice and DEVOUR! Keep stored in the freezer.

Here’s an easy pick-me up to get you started on a busy day: Melt butter in a large skillet over medium high heat. Add garlic and cook for about 1-2 minutes. Stir in chicken/vegetable broth, milk and fettuccine; season with salt and pepper, to taste (add some colorful veggies for a healthier option!) Reduce heat and simmer, stirring occasionally for about 18-20 minutes. Stir in Parmesan. Add more/less milk as needed until desired consistency is reached!
