Caramelized bananas are currently my favorite toast topping, and this morning I discovered that they taste even better on top of a thick layer of chia seed jam 🤤 Best thing about this loaded piece of @foodforlifebaking toast was it only took about ten minutes to throw together 👏🏼 To make the jam, I heated a cup of frozen blueberries and strawberries in a saucepan over medium heat and mashed them with a wooden fork until soft. I added in a heaping tbsp of @salbachia white chia seeds and let the mixture cook on medium heat until most of the liquid had evaporated and a thick jam was left. To make the caramelized bananas, I sprayed a little avocado oil in a stovetop pan on low heat and cooked thick banana slices (sprinkled with a little coconut sugar) for a few minutes in total on each side, flipping every minute to make sure they didn’t stick to the pan. Topped the toast with some coconut flakes, shelled hemp seeds, and some @soomfoods tahini (drizzled that on after this pic) 💥💥 Have a good Monday friends!

Pitaya bowl ➡️ Just blend some frozen (pink) pitaya with frozen bananas and a little coconut milk to get a creamy pink smoothie bowl. I got my pink pitaya from @jurassicfruit [pr sample] 💖 and froze it myself. ❄️ Frozen mulberries get really crunchy when in contact with something cold - discovery of the year for me! Savory recipe here 👇👇👇 Grilled Hawaiian Pork Chops INGREDIENTS 1 cup low sodium soy sauce 1 Tbsp. sesame oil 1/3 cup brown sugar 1/4 tsp. ground ginger 1/2 tsp. crushed red pepper flakes (or more if you want it to be spicy) 3 large cloves of garlic, minced or pressed 2 Tbsp. ketchup 1 can of pineapple rings (reserve 1/2 cup of the juice for the marinade) 1 package of Smithfield All Natural Boneless Pork Chops 2 Tbsp. corn starch Chopped scallions INSTRUCTIONS Whisk the low sodium soy sauce, sesame oil. brown sugar, ground ginger, red pepper flakes, garlic ketchup and pineapple juice until well combined. Pour the marinade over the Smithfield All Natural Boneless Pork Chops and let them sit for at least 10 minutes or overnight (you can also freeze them in the marinade and thaw them for later use). Spray the grill with non-stick cooking spray and heat it to medium-high. Place the meat and pineapple rings on the grill and reserve the marinade to make the sauce. Grill them for 4-5 minutes on each side. Rotate them a little bit midway through each side if you want a nice crosshatch grill mark (this is optional). Keep an eye on them because every grill is different- mine were thin but if your meat is thicker you can go a little longer. Once the internal temperature reaches 145 degrees (or longer if you want them well done) remove the from the grill and rest them for 10 minutes. While your meat rests, whisk the cornstarch into the marinade and strain it into a sauce pan. Heat over medium heat until it starts bubbling then reduce it to low heat for a couple minutes to thicken the sauce. Drizzle your meat and pineapple with sauce, sprinkle with chopped scallions and enjoy!

Starting to work a lot harder after getting back from orientation and realizing I was one of the weakest lifters there LOL. It was honestly the mental push I needed to finally start training my butt off again and break past my current plateau. I’m switching up my routine by adding in pull-up sets (great for a back and bicep finisher) towards the end of my workout. Make sure to focus on control. I finished week 1 of a new workout program! I love it so far! Its a little over 30 min a day and only 4 days a week! As a runner its been great because I can now easily schedule my runs. Its also great for people with busy schedules. This week I did not always follow the nutrition plan BUT I managed to maintain my weight and inches. Also I am already noticing changes. I feel sore sp thankfully I have my shakeology to help fuel my body for the next workout (or run).
