I hope you all know how speSHELL you are to me and that I couldn’t PASTAbly love you anymore! 🐚 • • Happy Thursday friends! I hope you all are having a good week and a great day so far! I just got home from getting an MRI for my knee (the one I’ve had 3 surgeries on) because they can’t figure out why I’m still in so much pain so hopefully they can finally figure it out! I’m a little achy from the whole thing but hopefully that wears off in time for when I go to work! I appreciate you all so much and I am so blessed to be part of this amazing community! ❤️ • • SHELLebrating all my tests being over with this huge bowl of goodness!! It has @eatbanza shells with @chosenfoods avocado oil and @traderjoes EBTB seasoning, a bunch of sautéed veggies, @bitchinsauce pesto all on a bed of spring mix and a sprinkle of @earthlychoice hemp hearts 🥗

Forever late to the breakfast posting game but hey 🤷🏻‍♀️ Also I think I’ve had Halloween on my mind hence these coconut Bounty inspired oats topped with homemade choc granola, lots of banana, coconut yogurt, and toasted coconut inspired by Stockholm’s @pomochflora 🤗 In other news thinking about running a half marathon in March and if you have any tips pleaseeee send them my way 🙏🏻 happy Thursday all! x • Coconut Bounty Oatmeal - 1/2 cup oats - 1 cup coconut milk (I use @califiafarms toasted coconut) - 1/2 zucchini (finely shredded) To top: 2 tbsp thick coconut yogurt, 1/2 banana (sliced), toasted coconut flakes, and homemade chocolate granola 👌🏼

Thursday night calls for king prawn curry 😍 I’m all about curry dishes that are packed with flavour and enough heat, but not so much to blow your mouth out! All you need: king prawns, garlic, onion, ginger, red chilli, red pepper, avocado, red onion, romaine lettuce, cherry tomatoes, white potatoes, greek yoghurt, lime juice and cucumber👌🏻 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ This meals perfect for an easy dinner whenever you want an Indian takeaway 😉 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ #healthyrecipe details 👉🏻 Blitz 1 quartered onion, 2 garlic cloves, a thumbsized chunk of ginger and ½ red chilli together in a food processor until it becomes a coarse paste, mix in a tablespoon of curry seasoning and stir the prawns around (add water if needed). Bake the prawns and red pepper at 180 (fan) for 30-40 minutes alongside some white potato slices. Serve with the veggie salad. To make the raita I just mixed some greek yoghurt, chopped cucumber, lime juice and mint ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ I hope you are having a great week - James ✨
