A huge thank you to @keto.copy for developing this truly amazing recipe for low carb chicken empanadas! If you’ve never tried fathead dough, I can’t recommend it enough. It’s a keto staple for a reason, and it’s the dough used for these empanadas. If you’re looking for a delicious indulgence to enjoy this long weekend, look no further. Recipe is below! . . . ⬇️ ⬇️ ⬇️ . . . INGREDIENTS: *10oz shredded mozzarella cheese *1 large egg *5oz almond flour *1 tsp baking powder *1 fully cooked chicken breast or thigh, shredded *2 tbsp cream cheese *1/3 cup sour cream *1/4 cup hot sauce *1/2 tsp garlic powder *1/2 tsp onion powder *1/2 tsp dried parsley *coconut oil *salt to taste DIRECTIONS: 1️⃣In a large bowl, heat the mozzarella cheese in the microwave at 30sec increments until fully melted. Allow to cool slightly, then add the egg and mix well. Add the almond flour and baking powder, mixing well with a fork. If necessary, kneed the dough with your hands until the cheese and almond flour are fully combined. 2️⃣Roll the dough out to 1/4 inch thickness. Cut out 16 circles, approx. 4 inches each. 3️⃣Combine the chicken, cream cheese, sour cream, hot sauce and seasonings and mix well. Add 1tbsp of the mixture to each round of dough, fold the circle in half and pinch the edges together. 4️⃣In a heavy-bottomed pot, heat an inch of coconut oil until it reaches 350F degrees. Fry the empanadas 2 at a time, about 30sec per side, until golden brown. Drain on paper towel, season with salt, and enjoy!
