This, my friends, is why for the first time in human history, there are more overweight people walking the earth than underweight. Why might this be? Well for one, our planted landmass in the United States is largely taken up by wheat, corn and soy production. We eat much of these subsidized crops, but also a lot of it is refined into oils and sugar that is then fed to cows (which also get a hefty subsidy.) . 5% of the planted landmass in the United States is dedicated to growing vegetables, which is perhaps one reason why they're relatively so expensive! 90% of Americans do not consume enough of them, according to the CDC, and may explain why the same proportion is deficient in at least one vitamin or mineral. . When you consider the research showing how one large daily salad (something I'm an advocate for and talk about in my book Genius Foods) might actually prevent brain aging, it becomes evident that society seems to want youthful, high performance brains to be a privilege of the upper class. Maybe that’s it’s way of maintaining the status quo. But I think we can change that. What say you? . Always love some maple sriracha tofu 😍 I also feel like this is a pretty good recipe for those trying to like tofu. It’s sweet but spicy and baked so that it becomes super nice and crispy 🙌🏼 Perfect recipe for #veganuary. More meatballs, but made from veggies. More pasta, but made from chickpeas. Grab the recipe #ResolveToEatMorePasta The Deets: 1. Cook the 1 cup cauliflower florets and 1/2 cup of mushrooms in a pot of boiling water for about 5 mins, until fork-tender. Drain well. 2. Pulse 1.5 cups cooked brown rice, plus the cauliflower and the mushrooms, through a food processor or high speed blender until semi-smooth. 3. Transfer mixture to a large mixing bowl and combine with ⅓ cup of oat flour or almond meal, 2 tsps spices (chili powder, paprika, and/or cumin), 1 tsp soy sauce, 2 eggs. Stir until everything is incorporated. Roll into balls. 4. Bring a pot of salted water to a boil and add 2 boxes of Banza Chickpea Spaghetti. Cook according to package instructions, then strain, rinse and reserve. 5. While the pasta cooks, heat a thin layer of olive oil in a skillet over medium heat – add the balls and cook for a few minutes on each side – they will need to be gently turned every so often to get browned all the way around. 6. Serve with marinara sauce and cooked Banza.

Beet Brownie with Raspberry Beet Mousse 😋... once again I’m sharing this delicious combo and I’m leaving the recipe for all who have asked me for. Beet Brownie 250 g beet purée 1 bananas 2 vegan eggs ( or 2 regular eggs) 190 g spelt flour 4-5 tbsp cacao 5 tbsp coconut oil melted 3-5 tbsp date syrup 2 tsp baking powder Blend everything . Bake 25-30 min 180 . Beet raspberry mousse: 600 ml coconut cream 150 g white chocolate 200 g beet purée 200 g raspberries, mixed 1/2 lemon juiced 2 g agar agar Combine coconut cream and agar agar. Cuire 2-3 minutes. Add other ingredients and Well combine. Cool a bit. Pour over the brownie . Refrigerate for a few hours. Enjoy ! . . . {NEW} Instant Pot Vegetable Broth 🌱 A beautifully aromatic, and flavorful base to any soup or meal! I LOVE knowing what is in my broth! This is also very interchangeable, so use your very favorite herbs and veggies! You're going to LOVE how your house smells while this broth is cooking! I've included Instructions for Instant Pot, Crockpot, and Stovetop. Ingredients: 1 large onion, quartered 2-3 carrots, halved 4-5 stalks of celery, halved 2-3 green onions, ends removed 2 apples, cut into quarters 1 large zucchini, cut into large chunks 1 bell pepper, seeded and chopped 1 cup chopped pumpkin OR butternut squash 6 cloves of fresh garlic, whole 4 inch nob of ginger, peeled 1 tsp pepper 2 bay leaves 1 rosemary stalk 2 fresh thyme Instant Pot Instructions: Place everything in your Instant Pot. Add water, enough to reach the 10 cup mark (for a 6 quart Instant Pot) Press MANUAL button and set for 30 minutes (for newer models press the BROTH/SOUP option) Once time is up, allow Instant Pot to release pressure naturally. It should take about 10-12 minutes. Carefully remove the lid allow broth to cool. Strain the liquid through a fine mesh strainer and discard the solids. Store in proper air tight containers in the refrigerator or freeze for up to 3 months. Crock-pot Instructions: Place everything in a large Crockpot and fill with water so that everything is a few inches below the top. Cover with lid. Allow to cook on LOW for 12-16 hours. Often this means you need to reset to keep your machine going. Add water if necessary halfway through (this can happen when your lid doesn't have a good seal.) Carefully remove the lid allow broth to cool. Strain the liquid through a fine mesh strainer and discard the solids. Store in proper air tight containers in the refrigerator or freeze for up to 3 months. Stovetop Instructions: In a large stockpot add all your ingredients, and fill with pot water several inches from the top. Bring to boil, then lower to the lowest possible simmer. Stir, and cover with tight lid. Allow to low simmer for up to 8 hours, stirring occasionally and possibly adding more water 1-2× if needed. Carefully remove the lid allow broth to cool. Strain th
