Niu Lan Keng. Quick guide to recognizing Niu Lan Keng tea, Rou Gui in particular. Have you seen it being picked? Do you know its maker well? Did it cost more than 10000 RMB per 500 grams? If answer to any of these questions is 'no', then it's most likely fake. Chasing after Niu Lan Keng tea is hard to understand for me. Badly processed Niu Lan Keng leaves will not be good tea, although it will still cost an arm and a leg. And really, is Niu Lan Keng that much better than other authentic yancha? Same applies to Ma Tou Yan tea, to a bit smaller extent. In general, all claims of 'zhengyan' teas have to be taken with a grain of salt. 🇵🇱and🇬🇧↓↓ Beautiful tea garden in Wusandi. Wusandi, although it's not Zheng Yan area of Wuyi mountain, is very highly regarded. First of all, because of its elevation it's called 'high mountain yancha'. Second, there are very few people living in this area permanently, so it's pollution-free. And it has a lot of old Shui Xian bushes, that are particularly sought after. This beautiful garden of Mr. Xie is surrounded by a forest and produces organic tea. Many tea cultivars are grown here: Bai Rui Xiang, Rou Gui, Huang Guan Yin, Qi Dan, Que She, Ai Jiao, Shui Xian. Maybe some more that I didn't remember. ___________________________________________________ Piękny ogród herbaty w Wusandi. Wusandi, chociaż nie znajduje się w rdzennym parku krajobrazowym Wuyi, nazywanym w świecie herbacianym Zheng Yan, jest bardzo cenioną lokalizacją. Po pierwsze, że względu na wyniesienie, tutejsze herbaty nazywane są czasem „wysokogórską herbatą skalną”. Po drugie, bardzo mało osób mieszka w Wusandi, więc środowisko jest wolne od zanieczyszczeń. More of Tongmu Guan, the home of black tea. Smokehouses (qing lou) for making traditional smoked zhengshan xiaozhong are still in use, although fewer and fewer of them. I've found out that in Tongmu Guan they also produce Lao Cong hongcha! Yesterday @tong_xin_she brought me and @sweetestdew to Tongmu Guan reserve. The natural environment of Tongmu Guan is just breathtaking. The air is so fresh and filled with smell of the forest. The water is so clean and sweet. And the tea... The bushes are quite unique. In all of Wuyi I got used to the fact that all the bushes, except Shui Xian, are small and low. Many bushes in Tongmu are taller than me. And many of them are old. Amazing. Some facts about Mogan tea that I've learnt so far during my short stay here: 1. Mogan Huang Ya (Yellow Buds from Mogan) can mean either yellow tea or green tea. Confusing. But it's mostly green tea. The original name of Mogan green tea was Mogan Hong Qing (莫干烘青). 2. Tea cultivation in Mogan is relatively new. It only started in 1962. 3. Mogan Huang Ya is not the only yellow tea made here. They also make huang xiao cha and huang da cha. 4. When I tasted the local black tea (hongcha) I thought it tastes like Jiuqu Hongmei (aka Longjing Hongcha). No wonder. Longjing #43 is the prevailing cultivar here. And that applies to all kinds of tea made here. However, local varieties also exist. 5. Anji-style 'baicha' green tea is also made here. Mogan is very close to Anji. The natural mutation of Anji Baicha, Huangjin Cha (golden tea) is cultivated here as well. 6. Tea prices range from rather expensive to horridly expensive. And it's not always reflected in quality. 7. The environment is nice and clean. I cannot speak for all the teas produced here, but what I've encountered so far included organic and even wild growing tea. Mogan Shan is mostly a tourist spot and the nearest city (Deqing) is not s big industrial city. 8. Yellow Mogan Huang Ya can be brewed using gaiwan. Green Mogan Huang Ya is best brewed in an open glass vessel, like all delicate green teas. However, Mogan also produces high mountain Anji Baicha green tea, as it's very close to Anji county. What I'm actually holding is a future Yixing teapot. They are all like this in the beginning. It's a lump of dicaoqing clay raw ore. That's how pottery masters store their resources. This is Huang Long Shan, the place of the original Yixing purple clay ore mine. Did you know it's been closed since 2005? Since then it's a restricted area surrounded by a wall. Nobody is allowed to mine the real Yixing ore anymore. However, before then, many pottery masters collected enough ore to last them for decades. Interesting fact: it's not really in Yixing. It's in Dingshuzhen. Another famous mine, Qing Long Shan, has been turned into a lake and a park around it. Taiwan grown Shui Xian oolong. Not the highest quality, but it's done right. And it has the Shui Xian flavour. How else can I describe it? No other way. Shui Xian flavour. Could you accurately describe the flavour of carrot to someone who's never had it? I believe that's the most important thing to learn in tasting tea - learning the intrinsic character of a given tea, in order to be able to judge it by this in the first place. Takes years and dozens of teas. I always smirk when someone tells me 'it doesn't taste like X tea!' when they only had X tea once. Happens quite often at the shop counter. I've been told yancha doesn't look or taste like an oolong by someone who's only had Taiwanese high mountain oolongs. So, back to our Taiwanese yancha style Shui Xian. Is it good? It fits the style, so it's 'good' on the most basic level. But it's not outstanding in any way, compared to a multitude of Shui Xians that also fit the style. And a reminder: oolongs are supposed to be brewed with freshly boiled water. Yellow tea is the rarest of all teas. That's a fact, you can look up production statistics. Why is it so rare? It's hard to make yellow tea right and there aren't too many people out there who know how to do it. Why don't more people learn how to make it? You'll often hear stories saying that the tea had been forgotten and rediscovered. Probably bullshit. The sad reason for the scarcity of yellow tea is that the majority of the market doesn't like its flavour. For example, Huoshan Huang Ya, one of only four traditional yellow teas, quite often is in fact green tea, even though it keeps the name 'yellow buds'. The makers skip the 'yellowing' processing step. Thus the tea is easier to make, tastes like the much more likeable green tea, but keeps the prestigious title of yellow tea. The tea pictured here is Junshan Yin Zhen. Very distinct yellow tea taste profile. Fresh, but candy sweet. Very low astringency. Full in the mouth. It's only the second time in my life that I experience the classic yellow tea taste so distinctly.
