NEW BREWS // FLORA V6 // Berliner Weisse (2.8%) [flo-ra] The goddess of plants, flowers, and fertility in Roman Mythology. Brewed with wheat malt and raw wheat, Flora V6 was fermented with a house mixed culture and conditioned on hibiscus and chamomile. SOLANA // Witbier (4.5%) [so-lah-nuh] Solana means sunshine. The blend of a classic witbier and a foeder-fermented sour beer, Solana was brewed with wheat malt and raw wheat, and spiced with orange peel, coriander, and chamomile. After fermenting with a blend of Belgian yeast and lactobacillus, Solana was blended with 10% of a mixed-culture sour beer. JUNO // Sour Ale (5.75%) [joo-noh] the ancient Roman queen of heaven, a daughter of Saturn and the wife and sister of Jupiter: the protector of women and marriage. Juno was brewed with raw wheat, oats, and lactose milk sugar, quick soured, and fermented with our house kveik culture. During fermentation, Juno was generously dryhopped with Galaxy and Mosaic hops, then conditioned on blood orange peel and guava.
FRESH 4-PACKS // We have a limited amount of 4-packs available fresh from our canning run with @valkyrian_canning: SYNCOPATION // Foeder Aged Czech Pilsner (5%) Brewed with bohemian floor-malted pilsen malt and hopped with Saaz, Syncopation is fermented with our house lager yeast and lagered in one of our oak foeders. CHAKA KHAN // Sour IPA (6.5%) Chaka Khan was brewed with raw wheat, oats, and pilsner malt. Hopped generously in the whirlpool with Equanot and Galaxy, Chaka was fermented with our house kveik culture and double dryhopped with Citra, Galaxy and Simcoe. After fermentation, we blended in a small portion of our foeder-aged golden sour, with lends a light acidity. FLORA V6 // Berliner Weisse (3%) Brewed with wheat malt and raw wheat, Flora V6 was fermented with a house mixed culture and conditioned on hibiscus and chamomile. Our limited edition coffee cans are now available in the taproom! The cans are filled with freshly roasted beans from our roastery and each one comes with a lid to reseal them. The can design was based around the legend of the first person to discover coffee: an Ethiopian goat herder named Kaldi. The story goes that Kaldi discovered the magical beans one day after he saw his goats dancing, and realized they had eaten the red berries from a coffee tree which gave them an almost possessed like energy. Kaldi ate them himself and began dancing with them. A passing monk then brought the beans to a monastery where the monks were in need of something to keep them awake during long hours of prayer, and the idea was born to dry then boil the beans to make coffee a drink. We will be giving 20 cents from every can to a non-profit in the region which brought us this story, to promote sustainable farming and support the farmers who continue to produce these magical beans ✨
R Ø Y K // GRÄTZER / GRODZISKIE (4.2%) Røyk is a kviek-fermented Grätzer (aka Grodziskie), which is a historical Polish smoked ale. Røyk was brewed with bohemian pilsner and oak-smoked wheat malt, and hopped with German noble hops - Saaz and Saphir. Røyk was fermented at 35° celsius with Oslo kveik - a bottom fermenting kveik strain that can ferment extremely warm and produce lager-like results. After fermentation, Røyk was lagered for 6 weeks. S E L A H // BRETT PILSNER (5.5%) Selah began as a cold fermented Czech Pilsner, brewed with floor-malted pilsen malt and hopped with Hallertau Blanc. After a long and slow fermentation, we transferred Selah into chardonnay barrels onto a bouquet of brettanomyces strains. Selah was then lagered at 4° celsius in barrels for 6 weeks, where it developed a mellow funkiness. Look for a mild brett funk on the nose, with clean and crisp finishing notes. Now on tap!

Yesterday we got the team together for Thanksgiving and to celebrate our 100TH BREW! We are incredibly grateful for everyone that helped us get here. Cheers to the next 1000!

C O F F E E // Espresso Bean: Organic Natural Ethiopian Farm: Kayon Mountain Region: Guji Process: Natural Plant species: Arabica This single origin espresso came from The Kayon Mountain Coffee Farm owned by a single family in the Guji Zone of Ethiopia’s Oromia Region. Look for notes of blueberry, blackberry, raspberry and fudge in what has quickly became a staff and customer favourite roast! Our espresso bar is open daily from 7:30am-3pm.

At House of Funk we have a strong commitment to fermenting in wood. Our barrel program is highlighted by our five horizontal foeders, which are essentially large oak barrels - ours are 1000 litres each. Four of our foeders are inoculated with varying blends of bacteria and wild yeast, while the fifth foeder is reserved for our foeder aged Czech Pilsner - Syncopation. Each release from the foeders is unique since the complexity increases over time, meaning an endless amount of experimentation.
