Try veggie pizza crust! 1 large (or 2 cups) raw broccoli, pulsed to an almost powder in a food processor 1 small bushel chopped kale (same as above) 1 egg and 1 egg white 1/4 cup shredded Parmesan 1/4 cup shredded lowfat mozzarella Seasoning of choice (read below) Toppings of choice Mix eggs, 1/4 cup shredded Parmesan, 1/4 cup shredded mozzarella into the veg mix. The next steps are your personal preference. You have to season the mix. Personally, I use 3-4 fresh minced garlic gloves, 2 tsp dried oregano, 2 tsp dried basil. Form into a ball and press firmly onto nonstick parchment lined baking sheet. Form into rectangle or round pressing down and end up with about 1/4 inch crust. Bake at 405 for about 25-35 mins. You have to eyeball it. Should have some light brown bits and firm when removed. NOW key, wait for it to cool, about 7 mins. Add sauce/toppings of choice. I use Trader Joes jarred sauce, because it has limited ingredients, and we love it. But I've also used bbq sauce for a bbq pizza. Anyway, top with whatever toppings you like, pop back in the oven (still 405) until your cheese is bubbly or until you are happy with the way it looks. Once again, KEY, let it rest! Resist the urge to dive in. How about this flank steak lomo saltado?! ๐Ÿค— In a large ziplock bag: Approx 1 1/2lbs sliced flank steak Dashes of low sodium soy, paprika and cumin. Mix and let marinate 24 hrs. Day of cooking: Bake French fries according to instructions until very crispy, then set aside. 4 scallions, chopped 1 red onion, chopped 3 garlic cloves, minced Handful of cilantro, chopped or whole 1-2 tomatoes, rough chopped White wine vinegar, soy, paprika and cumin Remove beef from any liquid and pat dry. In a large skillet heat oil (I use canola, but just donโ€™t use olive oil) on medium high heat. Sear beef for about 3 mins per side until cooked. Remove. To pan add red onions and sautรฉ until slightly browned, add garlic for a min or so, add dashes of vinegar, soy, paprika and cumin. Return beef to pan, scallions, tomatoes and mix. Add fries and toss in cilantro. Serve immediately.
